2 eggs (or equiv egg sub.)
1/8 tsp salt
1/8 tsp ground pepper
2 tsp canola
1 T bell pepper, chopped
1 T onion, chopped
1 T garlic, minced
1 jalapeno, chopped
1/2 tsp cilantro, chopped
1 T cheese, shredded
Directions
- In medium skillet, heat oil over medium heat. Saute bell pepper, onion, garlic, and jalapeno until onion is mostly clear. Remove from skillet & set aside.
- Spray pan with non-stick spray. Add egg.
- Add onion mixture to top of egg along with cheese and cilantro. Allow to cook 3-5 min.
- Fold egg over to form pocket. Continue cooking, flipping occasionally for even cooking.
- Cook until desired doneness.
