Ingredients

1 tsp garlic powder
1/2 tsp salt, divided
1/4 tsp fresh ground black pepper
4 4oz boneless, skinless chicken breasts
cooking spray
1 T EVOO
1 8oz pkg presliced mushrooms*
1 sm zucchini, quartered lengthwise & sliced
4 garlic cloves, minced
1 c chopped plum tomato**
1/2 c chopped red onion
1/2 c chopped fresh basil
4 T balsamic vinegar
1/4 c grated fresh Parmesan
* I used baby bellas.
** I used cherry tomatoes, quartered.
Directions
- Preheat broiler.
- Cut chicken into thin strips. Sprinkle garlic powder, salt, & pepper over both sides of chicken. Spray with cooking spray for easier coating. Place chicken on broiler pan coated with cooking spray. Broil for 6 min on each side or until chicken is done. Remove from pan and keep warm.
- Heat EVOO in skillet over medium-high heat. Add mushrooms, zucchini, and garlic. Saute 2 min. Add tomato, onion, basil, and vinegar. Saute 3 min. (or until veggies are cooked to your desired consistency)
- Serve veggies over chicken. Sprinkle cheese on top.
