California Chicken Salad

This is a fabulous chicken salad recipe. It's different but very tasty. Serve on top of salad or in a whole wheat pita.

Ingredients
  1. 1 lb cooked chicken breast, cubed*
  2. 2 Granny Smith apples, cored & chopped
  3. 1 c celery, chopped (2 stalks)
  4. 1/2 c green onion, chopped
  5. 2 T fresh parsley, chopped (1 tsp dried)
  6. 1/4 c light sour cream
  7. 1/4 c red wine vinegar
  8. 3 T mayo or salad dressing
  9. 1/2 tsp kosher salt
  10. 1/4 tsp freshly ground pepper
  11. 1/4 c walnuts, chopped & toasted (I subbed pecans)
Directions
  1. In large bowl, combine 1-5.
  2. Stir in 6-10.
  3. Fold nuts in last.
*I pan-roasted chicken in EVOO. For extra flavor, season the chicken with coriander, granulated garlic, salt & pepper.
