Ingredients
- 1 lb cooked chicken breast, cubed*
- 2 Granny Smith apples, cored & chopped
- 1 c celery, chopped (2 stalks)
- 1/2 c green onion, chopped
- 2 T fresh parsley, chopped (1 tsp dried)
- 1/4 c light sour cream
- 1/4 c red wine vinegar
- 3 T mayo or salad dressing
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground pepper
- 1/4 c walnuts, chopped & toasted (I subbed pecans)
- In large bowl, combine 1-5.
- Stir in 6-10.
- Fold nuts in last.
